October Specials - Part Two
There’s a particular kind of comfort that only comes from food that’s been given time. As the year starts to slow and the evenings feel a little softer, we wanted the second chapter of our October Specials to feel like exactly that.
Meet Barbary.
A French classic, done with patience
At its heart is a duck confit made the traditional French way. The duck is cooked low and slow in its own fat until the meat is tender enough to fall from the bone at the touch of a fork. Then, just before it reaches you, the skin is crisped until it’s golden and crackling. It’s an old technique, and one we think is worth every hour it takes.
Built on something good
Beneath the duck sits a bed of duck fat potatoes, crisp at the edges and soft in the middle, tossed through with sweet red pepper and red onion. The vegetables bring a gentle sweetness and colour that balance the deeper, savoury notes of the confit.
The finishing touch
To bring it all together, we add a softly poached egg and a generous spoonful of our signature Hollandaise. This time it carries a citrus twist, with a touch of grapefruit that lifts the sauce and cuts cleanly through the richness of the duck. Break the yolk, let it run into the potatoes, and every bite finds its balance of rich, bright and comforting.
Come and stay a while
Barbary is the kind of dish best shared over slow conversation, whether it’s a weekend brunch with friends or a quiet moment just for you. It’s here until 30 October only, so come by, pull up a chair, and let us look after you.
Barbary is available as part of our October Specials until 30 October. We’d love to see you at Wild Honey.
