Wild Honey at Home: Our Beloved Berkeley Granola
Some dishes quietly become part of people's routines.
Over the years, the Berkeley Granola has become one of Wild Honey's most-loved breakfasts. It's the order our regulars return for time and time again. Light yet satisfying, wholesome without feeling worthy, and simple enough to let every ingredient shine.
Now, we're sharing the recipe so you can recreate a little Wild Honey at home.
Whether it's a slow Sunday morning, breakfast before work or an afternoon pick-me-up, this granola is made with pantry staples and comes together beautifully with creamy vanilla yoghurt and fresh seasonal fruit.
Ingredients
For the Granola
400g organic whole or rolled oats
125ml apple juice
2 tbsp coconut oil
70g raw almonds
75g sunflower seeds
30g pumpkin seeds
35g sesame seeds
35g coconut flakes
30g dried cranberries or dried blueberries
For the Vanilla Yoghurt
Greek yoghurt or coconut yoghurt
Vanilla bean paste (to taste)
Method
Step 1: Bake the Granola
Preheat your oven to 160°C (140°C fan-forced / Gas Mark 3).
In a large bowl, combine the oats, apple juice, coconut oil, almonds, sunflower seeds, pumpkin seeds, sesame seeds and coconut flakes. Mix until everything is evenly coated.
Spread the mixture evenly onto a flat baking tray.
Bake for approximately 30 minutes, stirring once or twice during baking, until the granola is evenly golden and fragrant.
Allow the granola to cool completely before folding through the dried cranberries or blueberries.
Store in an airtight container where it will stay crisp and ready for breakfast throughout the week.
Step 2: Prepare the Vanilla Yoghurt
Place your Greek or coconut yoghurt into a bowl and add a spoonful of vanilla bean paste.
Using a spatula, gently fold the mixture together until evenly combined. Avoid over-stirring, as this can cause the yoghurt to become thin and watery.
To Serve
Spoon the vanilla yoghurt into your favourite bowl and generously top with the freshly baked granola.
Finish with seasonal fresh fruit such as berries, banana, mango or stone fruit, and if you like, a drizzle of honey.
